Lemon Pepper and Herb Cornish Hens

Cornish hens are a delicious and beautiful way to enhance your Yom Tov table without breaking the bank. I love the combination of dried herbs and lemon pepper. It’s a perfect blend to enjoy as the weather turns slightly cooler.


  • 3 David Elliot Rock Cornish Hens
  • 2 tablespoons lemon pepper
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon dried parsley flakes
  • 1 and 1/2 tablespoons oil


  1. Preheat oven to 400 degrees Fahrenheit.
  2. Combine the spices in a bowl.
  3. Pat the Cornish hens dry with a paper towel and rub on the spices. Place the hens in a roasting pan and drizzle the olive oil over them. Roast for 45 to 60 minutes, until the skin is golden and an instant read thermometer reads 165 degrees Fahrenheit.
